"It's all about the food," says Gregory Schulson, founder and president of Burrito Beach. "My Goal is to deliver delicious, made-to-order, fresh Mexican fare and gourmet burritos in a high energy, fast casual environment." Schulson was introduced to the restaurant industry at the age of 12 while working at one of his father's quick-service Arby's restaurants. (Schulson's father Michael, is one of Arby's largest franchisees.) "I learned what it takes to run a successful restaurant by working at my dad's stores," says Schulson.
Upon graduation from Cornell's School of Hotel Administration, Schulson joined Levy Restaurants as a manager of Bistro 110. While there, Schulson had the idea to present 'full-service' quality food in a quick service environment. "With my busy lifestyle, I was always looking for a quick, affordable meal: I didn't want to sacrifice quality and I didn't usually have time for a full service restaurant," recalls Schulson.
Schulson's enthusiasm for the hospitality industry continued through more formal education. While obtaining his MBA from the University of Chicago, Graduate School of Business, at only 25 years old, Schulson opened Chicago's first Fresh Mex concept based on his vision.
Professionally, Schulson, 37, serves on the Board of Directors of the Illinois Restaurant Association, Arby’s Franchise Association and is a member of the Economic Club of Chicago and Young Presidents’ Organization. Additionally, Schulson is involved with several local charities. |
