FAST FOOD THAT'S GOOD FOR YOU, GOOD FOR THE PLANET Burrito Beach and Bill Kurtis' Tallgrass Beef Join Forces To Promote Sustainability With Great Taste (Chicago) Two locally-based businesses have teamed up to make sustainable dining accessible – not just to patrons of higher-priced restaurants, but to all Chicagoans. Burrito Beach, a fast-casual Mexican concept with seven locations throughout the city, and Tallgrass Beef have come together for a dual mission – to prove that tasty, eco-friendly choices can be made both affordably and conveniently and to raise funds for Chicago's only sustainable farmers' market, the Green City Market. "When Burrito Beach came to us with this idea, we were thrilled!" states Bill Kurtis, former newsman turned rancher, and founder of Tallgrass Beef. "Having a fast-casual concept interested in sustainability shows that we, as a community, are moving in the right direction," states Kurtis. On Wednesday, October 24, Burrito Beach and Tallgrass Beef will unveil their Barbacoa Burrito. A revolution in fast-casual dining, the Barbacoa will use 100% grass-fed Tallgrass beef, an ingredient normally found in higher-priced, full-service establishments. The Barbacoa will be served at all Burrito Beach locations at a price that puts high-quality grass-fed beef within reach of most any budget – $6.79. A portion of the proceeds from the sale of each burrito will be donated to the Green City Market, and the Barbacoa Burrito will be available at Burrito Beach through the end of the year. ![]() "Working with Tallgrass, another Chicago-based business, was an obvious choice," says Greg Schulson, founder and president of Burrito Beach. "With Tallgrass, not only do you get all the environmental and health benefits of eating grass-fed beef, but you get this knock-your-socks-off flavor that proves healthy, sustainable options are both accessible and truly delicious." To create the Barbacoa, Burrito Beach will slow-cook and marinate Tallgrass beef brisket in its signature "Baja" salsa, then roll the brisket in a flour tortilla, accompanied by house-made salsa verde, smoky pinto beans, Spanish rice, shredded jack cheese, diced tomatoes, romaine lettuce, fresh onion-cilantro mix, and sour cream. A healthier choice for humans is not the only benefit that comes with choosing Tallgrass beef; it's also a more responsible choice for our planet. Tallgrass beef is naturally-nourished by a food source – grass – and produced without sub-therapeutic antibiotics, growth hormones or grain. For more information, visit TallgrassBeef.com. When rancher and former CBS anchorman Bill Kurtis founded Tallgrass Beef, he hand-picked cattle with purebred Angus genes dating back to the foundations of this country. The result was cattle of superior quality that fatten naturally and easily on a grass-based diet to produce meat with a sweet and buttery flavor. Lower in both saturated fat and cholesterol and higher in vitamin A, vitamin E and omega-3 fatty acids, a six-ounce cut of grass-fed beef has as many as 100 fewer calories than a grain-fed cut of the same size. Founded in 1995 in Chicago, Burrito Beach now has seven locations throughout the city. Mixing fresh ingredients with fresh ideas, Burrito Beach creates a fast-casual experience unlike any other. With its unique twist on Mexican-inspired fare, Burrito Beach incorporates exciting flavors into traditional favorites to create original and delicious made-to-order meals served in a colorful and laid-back atmosphere. In addition to the house favorite – the Baja Chipotle Chicken Burrito, Burrito Beach features a variety of unique "Gourmet Burritos" as well as award-winning, made-from-scratch guacamole. |
